“Green leaf abalone”? This guy speaks at a fairly mid pace with a lot of pauses and cadences... and then as soon as he gets to the subject/objects of the conversation (as well as a few actions/verbs when their conversation turns to HOW the abalone are cooked) he, for some reason, speeds up to double time and just slurs through them... doesn’t have much to do with the accent or any tonal changes in his words... the changing of speed as he speaks is just awkwardly frustrating (especially when you’re trying to figure out what he was referring to in order to look it up). Such a small thing, but for the life of me, I cannot figure out why. Here goes nothing, let’s see if google autocorrects me in the search...

Hey, just so people know, boiling and grilling a shellfish doesn't take away any form of flavor, the importance is how you cook it and overcook and of course there is an overall difference in flavor, but to say that "boiling takes away flavor" is completely false and becomes a matter of opinion as to which you prefer. I prefer my shellfish to be boiled, because the texture is chewy and juicy and the flavor becomes nice and fluid for me. I don't mind grilled shellfish, and I never grill it myself, always from a professional restaurant chef, it always tastes kind of dry and idk how to describe the texture, it's like its tough and idk feathery to me, I always ask for salt free, so no salt is ever added when I eat in a restaurant, but when I cook at home I usually use Tomato powder which has some sodium in it, but I can control how much I use. I always boil my shellfish, like I said it depends on what you actually like. Also boiling shellfish in sodium if u absolutely need it, to me is easier for the shellfish to absorb, I mean that's just how I like my crawdads on occasion. My tongue is just really sensitive to the taste of sodium, if I feel like it's too salty, I immediately spit it out. Most restaurants will try and sell you on their ways being the best, but studying food as an RD major, I've learned that people's tongues are different, and get this, the majority of people and we're talking more than 75% of people in the world, do not taste the difference between supposed good quality food and a more economic but still good quality food. For example, I can't taste the difference between crawfish brought frozen vs. crawfish that's been bought, fresh and alive. There are some people that can't taste the difference between crap and good food, but those are even more rare than the people who require a fine and exquisite tasting dish.

Honestly I'm not too sure about this episode. The definition of seafood is really too broad. I mean how can you even compare oysters with marrons... that's like comparing steak with BBQ chicken. I think they need to do separate episodes on oysters, crustaceans, fish, etc.
